
Ingredients
- 2 pounds ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 3/4 cup milk
- 1/4 cup fresh parsley, chopped
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 large egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Topping
- 1/4 cup ketchup
- 1/4 cup parmesan garlic salad dressing
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat oven to 375° and grease a 9-by-13-inch baking dish or loaf pan.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, milk, chopped parsley, minced garlic, chopped onion, egg, Italian seasoning, salt and pepper. Mix until well combined.
- Transfer the meat mixture into the greased pan, shaping it into a loaf.
- In a small bowl, add the topping ingredients and stir until well combined.
- Using a spoon or spatula, spread the topping evenly over the meatloaf.
- Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165° and the meatloaf is cooked through.
- Let the meatloaf rest for 5-10 minutes before slicing and serving.
- Serve with mashed potatoes and a side salad for a full meal.
