
Ingredients
- 1 tablespoon olive oil
- 1/2 onion, finely diced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons minced garlic
- 4 peaches, peeled and diced
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons brown sugar
- 4 tablespoons apple cider vinegar
Instructions
- In a medium saucepan, sauté the diced onion in oil until it becomes tender and translucent.
- Add in the ginger and garlic and continue cooking for about a minute.
- Add the peaches, seasonings, brown sugar and vinegar to the saucepan and stir until well combined.
- Bring the mixture to a simmer and allow to cook for 10-12 minutes.
- Remove from heat and allow to cool slightly to thicken.
- Serve warm over pork chops.
