
Ingredients
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 3 cups chicken, cooked and diced
- 4 cups chicken broth
- 1 cup mushrooms, sliced
- 1 small yellow or orange bell pepper, diced
- 3 cans (15 ounces each) white beans (Navy, Great Northern, Cannellini, etc.), rinsed and drained
- 1 can (11 ounces) corn, drained
- 2 cans (4 ounces each) diced green chiles
- 1 jar (15 ounces) Alfredo sauce
- 1 cup sour cream
- 1 tablespoon cumin
- 1/2 teaspoon cayenne pepper
- 1 teaspoon white pepper
- 1/2 teaspoon Adobo seasoning
- 1 cup shredded pepper jack cheese
- 1 cup shredded white cheddar cheese
Instructions
- Sauté onion and garlic in oil until tender.
- Add the chicken, broth and mushrooms, then bring to a boil.
- Add the beans and return to a boil.
- Reduce heat and add bell pepper, corn, chiles, Alfredo sauce, sour cream and spices.
- Simmer for 30 to 45 minutes.
- Stir in cheeses until melted and creamy.
- Serve with crackers or bread.
