Chicken (White) Chili

Ingredients

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 3 cups chicken, cooked and diced
  • 4 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 small yellow or orange bell pepper, diced
  • 3 cans (15 ounces each) white beans (Navy, Great Northern, Cannellini, etc.), rinsed and drained
  • 1 can (11 ounces) corn, drained
  • 2 cans (4 ounces each) diced green chiles
  • 1 jar (15 ounces) Alfredo sauce
  • 1 cup sour cream
  • 1 tablespoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon white pepper
  • 1/2 teaspoon Adobo seasoning
  • 1 cup shredded pepper jack cheese
  • 1 cup shredded white cheddar cheese

Instructions

  1. Sauté onion and garlic in oil until tender.
  2. Add the chicken, broth and mushrooms, then bring to a boil.
  3. Add the beans and return to a boil.
  4. Reduce heat and add bell pepper, corn, chiles, Alfredo sauce, sour cream and spices.
  5. Simmer for 30 to 45 minutes.
  6. Stir in cheeses until melted and creamy.
  7. Serve with crackers or bread.
