
Ingredients
- 1 tablespoon olive oil
- 1/2 tablespoon minced garlic
- 1 bag (8 ounces) fresh spinach, large stems removed
- 1 block (8 ounces) cream cheese, softened
- 1/2 cup sour cream
- 2 cups Italian blend shredded cheese, divided
- 1/2 teaspoon Adobo seasoning
- 1/2 cup marinated sun-dried tomatoes, drained and diced
Instructions
- Preheat oven to 350 degrees.
- In a large pot, heat olive oil over medium heat.
- Add garlic and sauté until fragrant (about 30 seconds).
- Stir in the spinach and cook until wilted and bright green.
- Add in the cream cheese and stir until well combined.
- Stir 1-1/2 cups cheese, seasonings and sun-dried tomatoes, and mix well.
- Pour the dip into a small cast-iron skillet.
- Sprinkle the remaining cheese evenly over the dip.
- Bake in the preheated oven until the cheese is melted and bubbly. Pop it under the broiler briefly, if desired.
- Serve immediately with pita chips, French bread or crostini.
