Fiesta Ranch Dip

Ingredients

  • 1 block (8 ounces) cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 packet (1 ounce) Ranch seasoning mix
  • 1 bell pepper, diced
  • 1/4 cup diced onion
  • 1 can (11 ounces) Mexicorn
  • 1 can (15 ounces) black beans, rinsed and drained
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine cream cheese and mayonnaise until smooth.
  2. Add Ranch seasoning packet and stir until well mixed.
  3. Stir in the bell pepper, onions, corn and beans and mix until combined.
  4. Season to taste with salt and pepper.
  5. Refrigerate for at least one hour.
  6. Serve with your favorite chips or crackers.
